The Shed Distillery of PJ Rigney's first international release is Drumshanbo Single Pot Still Irish Whiskey. Irish malted and unmalted barley and Irish barra oats are used in the whiskey's triple distillation and non-chill filtration processes. Barra oats are an uncommon ingredient that lends the whisky depth and a luxurious, creamy mouthfeel.
The distiller, the first to open in Connaught in more than a century, produces each and every drop,

with Head Chemist Brian Taft tasting and hand-picking each and every cask to ensure complete consistency in every bottle. It is actually a small batch because only one cask of alcohol is produced daily by three copper pot stills. The whiskey is then aged in Kentucky Bourbon and Sherry Oloroso barrels without the use of artificial coloring, resulting in a drink that is smooth, elegant, and has a hint of spice.

Orchard fruit and a hint of crisp barley-sugar sweetness are followed by toffee, caramel, and a dash of white pepper. A wonderfully shaped fruit pie is flavored with stewed apple and pear flavors, drizzled cream, and spiced crust.

On the palate, the cream takes the lead while white pepper, anise, nutmeg, and a hint of subtly warming cinnamon emerge through. The fruit from the nose is followed by apples and pears, which are perfectly balanced in terms of sweetness and acidity. Brown sugar tastes digestive biscuits come in last, with traces of toffee and bourbon whiskey.
